Adobo Sauce

This is a recipe for making your own adobo sauce at home. You only need a few ingredients, dried California chiles, garlic, oregano and cumin.  The chiles are toasted, then soaked and blended with the rest of the ingredients.

Use the sauce to add flavor to soups or stews or you can use it as a wet rub before roasting pork or beef.

    • 8-10 dried California chiles
    • 2 cloves garlic finely minced
    • 3 cups hot water
    • 1 tablespoon vegetable oil
    • 1 tablespoon flour flour
    • 1/2 teaspoon ground cumin
    • 1 teaspoon dried Mexican oregano
    • salt to taste


Roast chiles in pan or oven making sure not to allow the chiles to burn.

Place roasted chiles in hot water and let soak for 30 minutes.

Place softened chiles in a food processor and puree until smooth. (use half of liquid from soaking). Add rest of ingredients except oil and puree until smooth.

Heat the oil in pan until almost smoking then add puree and cook for a few
minutes then strain.

Use to marinate meats or chicken.
