Vegan Philly Peppersteak Sandwich
are made with setian which is grilled with shallots and pepper then flash-finished with cognac. Grilled vegetables are piled atop warmed French whole wheat rolls then d topped with vegan cheese.

sautéed mixture of mushrooms, onions and red bell peppers vegan cheese of choice (optional)

(approx.) balsamic vinaigrette

wheat rolls, lightly warmed or toasted
Instructions
In a sauté pan, heat olive oil, add shallots and cook until transparent. Add seitan and black pepper and cook until lightly browned. Add vegetable broth and let reduce slightly, then add cognac or brandy and tilt pan so flame comes into close contact with liquid and cook until the alcohol burns off.
If you have an electric stove get the heat up and use a long handled lighter and come into close contact with liquid at side of pan.
Drizzle balsamic vinaigrette on French roll and portion seitan/shallot mixture on each sandwich. Top with sautéed mushrooms, onions, bell peppers, and vegan cheese.
