box rotini tri-color pasta

red
bell pepper, sliced thin,

orange
bell pepper, sliced thin

onions, chopped

Feta cheese, crumbled
1/4

prosciuto, sliced 1/8 thick, cut into strips
1/4
cup
olive oil
4
cloves
garlic, chopped
Instructions
Cook the pasta according to the package instructions, don't overcook.
While the pasta is cooking add the olive oil to a small pan, add the garlic and cook until it just starts to turn golden. Don't overcook the garlic or it will get bitter. Remove from heat.
Once pasta is done cooking, drain.
Assemble all ingredients in a large pasta bowl and toss well with garlic olive oil to coat. This can be served warrm immediately or you can chill the dish and server later. This is a great make-ahead dish and perfect for picnics.

This pasta is one of my favorite summer cold pasta salads. We pack this up and take it to our local "concert on the lawn" events. We like it warm or chilled. I love the flavor of the salty feta with the otherwise bland taste of the pasta. We chop a lot of garlic to add to the oil but just know you're going to reek of garlic the next day. I've tried some variations but this is my favorite combination.
