Tacos Vegetarianos (vegitarian tacos) are served with warmed tortillas then topped with black beans, chipotle potatoes, jicama relish, fresh corn, cotija cheese, pico de gallo and fresh avocado.
Prepare potatoes and condiments
Boil potatoes in a pot until they are done, set aside to let them cool.
In the meantime , blend chiles , garlic , cumin , tomato paste, salt and pepper. Add the mixture to the potatoes and heat them in a pan .
In a mixing bowl combine all ingredients adjust seasoning and chill.
Combine all the relish ingredients in a small bowl, mix gently to combine, chill.
Place a tortilla on a plate and top with a spread of black beans, chipotle potatoes, jicama relish, corn, pico de gallo, and a slice of avocado.
