Halibut is wonderful smoked. This Smoked Halibut recipe uses alder wood chips in the smoker. The fish is marinated first in white wine, fresh tarragon or dill, lemon juice, butter and fresh parsley.
Tip: One reader substituted fresh sturgeon for the halibut and said it came out great.
In a bowl make marinade by combining first 8 ingredients.
Arrange fish steaks in one layer in a shallow pan. Pour marinade over fish; cover and marinate 1 hour.
Remove fish from marinade and place in smoker over medium heat using 2 tablespoons of alder smoking chips for approximately 25 minutes. Serve immediately garnishing with parsley and lemon wedges.
