A simple lemon vinaigrette and fresh Romano cheese made this Brussels Sprout salad fresh, tasty and healthy.

fresh Brussels sprouts, shredded thin
1/4
cup
finely shredded Pecorino Romano cheese
1/4
cup
olive oil

tablespoons
fresh lemon juice
1/2
teaspoon
lemon zest
Instructions
Place salad plates in refrigerator or freeze to chill.
Clean sprouts and shred using a mandolin or other slicer.
Combine the sprouts with the oil, lemon juice and zest and 1/2 of the cheese. Toss to combine. Plate on individual chilled plates and top each with equal amounts of the remaining cheese. Serve with freshly ground pepper.

I have NOT been a fan of Brussels sprouts but I'm so happy I gave this recipe a try. I was at a restaurant and tasted the salad there, then came back and found this recipe. It's very easy and tastes clean and fresh without any overly strong flavor from the Brussels sprouts.
