The quality of this salad is dependent upon the freshest of ingredients. For best results use home-grown tomatoes and fresh mozzarella cheese (not the harder, grating cheese). This is a good time to bring out your best extra virgin olive oil.
Slice the tomatoes into 1/4" thick slices and arrange on a plate or platter. Top each slice with a thin slice of the fresh cheese. You can tuck a leaf of basil under each piece of cheese or arrange it alongside the tomatoes.
Drizzle olive oil (or argan oil if using) over the top then sprinkle with salt and freshly ground pepper.
