Preheat Oven to 425F Combine olive oil, salt, pepper, garlic and fresh herbs in a small bowl. Mix well with a fork (or your fingers) until well combined. Place roast in a shallow roasting pan. Rub the roast with the olive oil and herb mixture. Poke the mixture into the roast between the strings where possible.
Place the roast in the preheated oven for 20 minutes then reduce the heat to 325F and continue to roast for about 4 hours or until a meat thermometer registers 145F in the thickest part of the roast. Remove the roast from the oven and allow it to sit for 20 30 minutes before carving. Serve with fresh mashed potatoes and steamed broccoli.
The leftover pork roast makes wonderful sandwiches.
