Roast Chicken Pradesh
(from Northern India) is a flavorful Indian recipe for roasted chicken. The spices include coriander seed, turmeric, cardamon and ginger. The recipe calls for 3, 2lb chickens but that may be difficult to come by given chickens in the U.S. tend to be at least 3+ lbs. If you want to use one large chicken you can but you may need to adjust the roasting time accordingly. Serve this dish with jasmine rice.

coriander seeds

freshly ground pepper (or to taste)
Marinade:

whole
onions, peeled (4 used for marinade)

Greek yogurt

cup
heavy cream
1/2
cup
butter, melted and cooled (or ghee if you have it)

tablespoon
ground turmeric

cardamon pods, seeds removed, discard pods

teaspoon
salt
Instructions
Preheat the oven to 350F
Wash and dry the chickens then prick them all over with a fork.
Crush the coriander seed and mix it with the ginger and the pepper. Rub that mixture into all of the chickens.
Grate 4 onions and combine with the yogurt, cream, butter, turmeric, cardamon seeds and salt. This will be your marinade/basting sauce.
Place the chicken(s) in a roasting pan with low sides large enough to fit but not with a lot of extra space around them.
Place the chickens in the oven and roast for 45 minutes; basting the chicken with the yogurt mixture about every 15 minutes.
Slice the last 2 onions and and place them on the roasting chickens. Roast for 15 minutes more making sure the onions are cooked through.
