Pre-made mole paste is the secret to making these flavorful tacos in just minutes. Substitute any left over meats for the chicken. This would work equally well with leftover pork loin or roast beef.

mole paste (Mayordomo or Juquilita)

chicken stock or water

chopped chicken breast (or meat of choice)
1/2

guacamole
Instructions
Combine the mole paste and the chicken stock (or water) to a small fry pan. Heat the mixture over medium heat, stirring to break up the mole paste. Stir until it becomes a medium-thick sauce. Add the chopped meat and simmer until heated through. Heat tortillas on a comal until lightly browned and heated through. Place two tortillas on a each (of 2) plates. Divide the meat mixture between the 4 tortillas. Top with guacamole.
