Traditional Spanish Tapas bar fare; small padron peppers are lightly fried in olive oil and sprinkled with sea salt.

Sea Salt
Instructions
Rinse peppers and pat dry on paper toweling.
Heat olive oil in a heavy pan until it just begins to smoke. Add peppers and saute, stirring constantly utill the peppers brown and blister.
Remove with a slotted spoon and place on paper toweling to absorb excess oil. Sprinkle with sea salt to taste and serve warm.
To eat, pick up a pepper by the stem, bite down on the pepper and pull the stem out and discard on your plate.
