Preheat oven to 350 degrees F.
Add 2 teaspoons olive oil to a large, heavy saucepan, add garlic and saute until light golden, don't burn.
Add onions, saute until they become translucent.
Add ground beef and break up with a flat-edge wooden spatula. Add sausage meat and break up with the ground beef, stirring until all the meat is browned.
Add tomatoes, tomato paste, seasoning, wine and parsley. Stir all ingredients to encorporate well. Bring to a boil, reduce to a simmer, partially covered. Simmer on low for at least 45 minutes to an hour. Can be prepared a day ahead if you like.
Boil pasta according to manufacture directions, about 10 minutes typically. Drain well.
Butter the bottom of a large lasagna dish or casserole.
Set aside a portion of all cheeses and about 3/4 cup or so of sauce for the top of the lasagna.
Place a layer of noodles, overlapping slightly to cover the bottom of the pan. Top with about 1/4 portion of the cheeses, then sauce. Continue until all noodles, cheese and sauce is used (except reserved amounts); about 4 layers. After the final layer use your reserved cheeses and sauce.
Cover with foil and bake about 45 minutes. Remove foil, bake 10 more minutes. Remove lasagna from oven and allow to sit at least 10 minutes before serving. Note: Don't try to cut it immediately or it will only fall apart. lasagna before baking
