Our recipe for
Orange Whiskey Chicken
is a variation of Bourbon Chicken. Very little alcohol is used in the recipe and you can just leave it out if you wish and replace the liquid with water or more orange juice. This recipe really features the sauce to which we added water chestnuts but you can change that up as you wish. Any other stir-fried vegetables would be good and particularly snow peas. We served our chicken with steamed broccoli and hot steamed rice. We prefer chicken thighs for a richer flavor but you can use chicken breast if you prefer.

Ingredients

bonless, skinless chicken thighs, cut into cubes.

peanut oil

cider vinegar

can, water chestnuts
Sauce:

cloves
garlic, minced
1/2
teaspoon
fresh ginger, minced
1
teaspoon
red pepper flakes (less if you prefer less heat)
1/3
cup
brown sugar

tablespoons
ketchup
2
tablespoons
frozen orange juice concentrate
1/2
cups
water (add enough water to orange juice concentrate to make 1/2 cup juice total)
1/3
cup
whiskey
1/4
cup
lite soy sauce
1/4
cup
regular soy sauce
Serving:
4

steamed broccoli or vegetable of choice

steamed white or brown rice
Thickener:
2
tablespoons
corn starch
2
tablespoons
cold water
Instructions
Combine the sauce ingredients in a medium bowl, set aside.
Heat the oil in a 12" skillet
Add the chicken meat and stir-fry until lightly browned. Remove the browned chicken and place in a bowl.
Add the sauce mixture to the pan and heat on medium. Once warm add the chicken and water chestnuts and bring to a boil. Reduce the heat and simmer until the chicken is cooked through, about 15 - 20 minutes.
In a small bowl dissolve the cornstarch in the cold water. Add to the chicken mixture and simmer until the sauce thickens.
Serve the chicken over hot rice along with your favorite steamed vegetables.
