These are great for breakfast served with fresh fruit, or for lunch with a fresh green salad. Eggs are combined with shredded cheese and mustard. The mixture is placed on multi-grained bread with ham slices then baked.

shredded Cotswold Cheese with Chives and Green Onions

whole grain mustard
Freshly ground pepper to taste

thick) slices multi-grain bread, cut slightly on the diagonal

Black Forest Ham, cut in half
Instructions
Preheat oven to 425°F and line a baking sheet with foil.
Beat eggs well in a medium bowl; stir in cheese, mustard and pepper.
Place bread on prepared baking sheet and spread about a spoonful of cheese mixture and a piece of ham on each. Spoon remaining cheese mixture over top.
Bake for 10 to 12 minutes or until hot and bubbly and cheese is lightly browned.
