Dried, raw organic chickpeas are used to make this classic appetizer, Nanoosh Hummus. Serve with fresh whole wheat pita bread.
Soak the chickpeas in water a day ahead.
Cook the chickpeas in boiling water for approximately 2 hours then strain and chill the peas.
Place the chickpeas in a food processor and mix with tahini, lemon juice, salt and water. Process until smooth.
Taste and adjust to taste by adding lemon juice, water and/or salt.
