Combine kale, salt and lemon juice and half the olive oil in a medium bowl. Kale can be pretty tough when it is raw so to remedy that simply massage the mixture for about 2-3 minutes until the kale starts to soften.
Add all the vegetables to the bowl.
In a small bowl mix the remaining olive oil (more if you wish) and vinegar. Use a garlic press and press the clove into the oil and vinegar mixture. Pour the mixture over the vegetables and toss until combined. Taste and adjust seasonings as needed.
Divide the salad and place on 2 chilled plates. Top the salads with the sprouts, then the sprouted seeds, then sunflower seed kernels. Serve!
