For Minty Feta Salad:

mixed greens
1/2
cup
fresh mint, roughly chopped

shrimp, tails removed
1/2
cup
crumbled feta or goat cheese
Handful of toasted walnuts
Fresh ground pepper, to taste
For Simple Citrus Salad Dressing:
1/2
cup
olive or canola oil (or a mixture of both)
1 1/2
tablespoon
lemon juice
1 1/2
tablespoon
stone ground or whole grain mustard
Salt and pepper, to taste

teaspoon
tarragon
1
teaspoon
dill
1
teaspoon
chives
1
teaspoon
Italian parsley
Instructions
On a serving platter or large bowl, toss the mixed greens and mint.
In a separate bowl, mix the oil, lemon juice, mustard, salt, pepper, tarragon, dill, chives and Italian parsley, for dressing.
Drizzle the salad ingredients with the dressing.
On top, add the shrimp, cheese, and walnuts. Garnish with fresh ground pepper.
