Based on a Rick Bayless recipe that uses garlic, cilantro, feta cheese, fresh lime juice, and vegetable oil. Make ahead at least an hour to allow flavors to blend.

vegetable oil such as canola or a virgin (not extra virgin) olive oil

good quality Feta cheese (no preservatives or thickeners
Salt to taste
Instructions
Place the ingredients in a blender jar and blend until creamy and smooth. Taste and adjust salt as needed. The salt content of Feta can vary immensely make sure to taste before adding any additional seasoning.
