These pretty little bars are made with sweet pastry crust flavored with ginger. The filling uses fresh lime juice and lemon extract.

Crust:

confectioners' sugar

ground ginger (McCormick)

teaspoon
salt
Filling:
1 1/4
cups
granulated sugar

tablespoons
flour
1/2
teaspoon
baking powder
1/2
cup
fresh lime juice
3
each
eggs, lightly beaten
2
teaspoons
lemon extract (McCormick)
4
drops
McCormick® Green Food Color
Instructions
Preheat oven to 350°F. For the Crust, mix flour, confectioners' sugar, ginger and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resemble coarse crumbs. Pat mixture into greased foil-lined 9-inch square baking pan. Bake 15 to 18 minutes or until crust is lightly browned. Remove from oven.
For the Filling, mix granulated sugar, flour and baking powder in large bowl. Add lime juice, eggs, lemon extract and food color; whisk until blended. Pour filling over warm baked crust.
Bake 20 to 25 minutes longer or until filling is set. Cool in pan on wire rack. Cut into bars.
