Recipe only takes 30 minutes if using precooked farro. Salad is topped with vinaigrette of lemon, olive oil, shallots, Dijon and thyme.

Salad:

precooked farro OR 1 cup uncooked farro

finely grated lemon peel

tablespoons
fresh lemon juice

tablespoons
extra virgin olive oil

tablespoon
finely chopped shallot

teaspoons
honey

teaspoon
Dijon mustard

teaspoons
finely chopped fresh thyme

1/4
teaspoon
pepper

baby greens OR arugula
Instructions
If you are not using precooked farro, prepare it before you start the next step.
Lamb Chops
Heat a grill pan over medium-high heat. Coat the pan lightly with oil on a paper towel or you can use cooking spray. Season the lamb with salt and pepper on each side. Add the lamb to the pan and cook 5 minutes each side. Remove from pan and let stand 5 minutes. Set aside.
Farro
Heat the farro per package instructions. If you are using the semi-pearled farro, cook 1 cup of farro with 2 cups of water. Bring to a boil then reduce heat to low and cook for 30 minutes. If you aren't using precooked farro then start this 30 minutes ahead. Once the farro is cooked, spread it out on a baking sheet and allow it to cool slightly.
Dressing
Combine 1/4 tsp salt and 1/4 tsp pepper with the lemon rind, juice, olive oil, shallots, honey, Dijon, and chopped thyme in a small bowl. Whisk to combine.
Presentation
Combine the farro and the greens in a bowl. Top with half of the dressing, and toss to coat the greens. Divide the salad among 4 plates. Top the salad with the lamb chops (2 per plate) and drizzle remaining dressing over the lamb and salad.
