This recipe for Key Lime Snow makes a nice light zesty dessert. Key limes are getting easier to find every year and this is a great use for them.
A mixture of gelatin, sugar, key lime juice and key lime peel is prepared and allowed to thicken slightly. The thickened mixture is add to beaten egg whites to make a foamy dessert. The snow is chilled for two more hours then served in dessert dishes, garnished with key lime peel.
Prep time includes 2 hours chill time. Note this recipe does contain uncooked egg whites so it is best to use pasteurized eggs.
Sprinkle unflavored gelatin over cold water in a large bowl and let stand five minutes.
Stir the sugar into the gelatin water until it is well blended.
Add the boiling water and stir until the gelatin is completely dissolved which should take about 3 minutes.
Now add the grated lime peel and the fresh key lime juice.
Chill the mixture in the refrigerator just until it is slightly thickened, about 15 minutes.
In a separate bowl, beat egg whites until stiff. Gradually add the gelatin mixture and continue beating until soft peeks form.
Spoon the dessert into 8 individual dessert cups or 1 large serving bowl.
Chill for 2 hours.
Garnish with a twisted lime peel.
