This recipe for John's Cactus Salsa is made with fresh nopales, diced tomatoes, pickled jalapeno's, garlic, onion, 3 kinds of beans, cilantro and olive oil. This is a pretty salsa you can serve with tortilla chips or use it top your tacos.
Combine all ingredients in a medium sized bowl and stir gently to combine. Allow the salsa to sit for 30 minutes or so to allow the flavors to blend.
If you're not sure how many jalapenos you can tolerate then start with 2 and add more to taste.
One can use this as a dip for tortilla chips, or a relish and garnish on burritos meat dishes or a general spicy condiment.
You can purchase nopales that have had the spines remove and are pre-diced.
