Coat a 9x5x3 inch non stick loaf pan with non stick cooking spray. Pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted into the center, comes out clean. Place the pan on a rack and cool in the pan 10 minutes then remove the bread from the pan. Allow the mango bread to cool at least 1 hour on the rack before serving.
