Instructions
Wash and trim the garlic. If the root end is larger than an inch in diameter, slit it lengthwise. Lay the garlic in a shallow glass or ceramic dish and drizzle with the olive oil. Sprinkle with salt, pepper and marjoram or thyme. Turn the stalks to cover uniformly with the oil and seasonings. Marinate at room temperature at least one hour. Build a charcoal fire or preheat the broiler. When hot, remove the garlic from the marinade and arrange on the rack or broiler pan. Cook until tender and faintly charred -- 2-3 minutes on each side. Serve hot or at room temperature, either alone on a platter or alongside a grilled steak or chicken breast.
