This is a simple recipe for grilled chayote squash topped with olive oil and mozzarella cheese.This would work well as a side dish for grilled steak or pork. You could alternately roast the chayote in the oven but grilling gives it a preferred flavor.
Preheat a grill to medium-high
Wash and dice chayote squash. Season with fresh cracked fresh pepper to taste. Add splash of olive oil and 2 pinches of mozzarella cheese.
Grill chayote with the cheese and olive oil in an aluminum foil pan on a covered charcoal grill (bake away from the coals) for about 4 minutes or until the chayote is tender and the cheese is melted.
To serve move the squash to a warmed plate an season with salt and pepper to taste.
