Galisteo Blue Cornbread is a Southwestern cornbread made with blue corn flour, pine nuts, Stilton cheese and buttermilk. This is a rich cornbread with a nice nutty flavor from the blue corn flower. Serve this cornbread with beans, soup, or even a stew.
Galisteo is a small unincorporated region in Santa Fe, New Mexico.
Preheat Oven to 425F
Grease a 8x8x8 glass or metal cake pan. Set aside.
Combine all ingredients with a fork just until blended (do not over mix). Pour mixture into the prepared cake pan.
Bake at 425F for 30 to 35 minutes. Cool a few minutes before cutting.
