Frijoles Cacahuate Con Chorizo Y Nopales (cranberry/borlotti beans) are combined with flavorful Mexican chorizo, onion, garlic, oyster mushrooms and seasonings. The beans are topped with roasted (cactus paddles) and roasted green onions and served in heated individual molcajetes.
Add the chorizo to a 2-3 quart pan and cook until the chorizo turns a golden brown color.
Add the onion and garlic to the pan and saute in the accumulated fat until softened and lightly browned.
Add the jalapeños and beans and bring the mixture to a boil.
Add the mushrooms and the herbs.
Reduce the heat and let the beans simmer for for 5 to 7 minutes.
Ladle the beans into to heated molcajete serving bowls then top with the roasted nopales strips and roasted onions.
