Firkin brings elegance to tacos. Succulent lobster is mixed with chives and butter then lightly sauteed. The mixture is combined with chipotle mayonnaise, queso fresco and pico de gallo in a crisp corn tortilla. OMG!

Heat peanut oil in a pot large enough to submerge a tortilla fryer by 2 inches 375F. Load tortilla fryer basket with 4” corn tortillas and fry until crisp. These can just be pan fried rather than "deep fried".
Drain tortillas on a plate lined with paper toweling. Keep warm.
In a sauté pan, toss chopped lobster, diced tomatoes, and chives in olive oil then add the garlic butter to finish the lobster mixture.
Place one tortilla on each of 4 warmed plates. Top each tortilla with 1/4 of the lobster mixture, shredded cabbage, pico de gallo. The top with sour cream, queso fresco and chipotle mayonnaise. Serve with a big smile and a glass of dry Riesling or fine Pilsner beer.
