Combine eggs, water and half and half into a small bowl and whisk to combine.
Saute chopped sausage in a small non-stick skillet over medium-high heat. Cook about 2-3 minutes until fully cooked, drain off any accumulated fat.
Add green onions to pan, saute about 1 minute. Whisk eggs one more time and add to pan. Cook until the mixture begins to set around the edges. Top with cheese. Turn mixture, folding it over until eggs are cooked through.
Note: It is not necessary to stir the bejeezus out of the eggs to scramble, a light folding action will do the trick.
Turn eggs out onto warmed plates.
