beans

oz. packet of Susie Q’s California Style Bean Seasoning

vegetable oil

onion, coarsely chopped

celery, chopped

tbsp
fresh parsley or cilantro, minced

whole kernel corn, 15 oz., drained
1
can
beef broth, 10-1/2 oz.

can
chicken broth, 10-1/2 oz.
1
can
diced green chilies, 4 oz.

tsp
ground cumin
1/4
tsp
ground Mexican oregano
1
flour
tortilla cut into 1” squares
Instructions
Cook pinquito beans with seasoning according to directions on package. Puree prepared beans until creamy (moisten with broth if necessary). Combine the next 6 ingredients in a large kettle and sauté until tender. Add pureed beans and then the next 5 ingredients. Simmer for 20 minutes, adding the tortilla squares during the last 10 minutes. Garnish.
