There are many recipes for uncooked salsa but they don't typically include cranberries. Even more importantly this salsa doesn't use buckets of sugar like most of the canned and jarred versions. Our cranberry salsa gets a flavor boost from chiles, mint, cilantro, orange juice and zest to name a few of the ingredients.
Use this condiment alongside your roast turkey or chicken or enjoy it atop a turkey taco or even your favorite turkey taco. For something completely different; spread it on cream cheese and serve on your cheeseboard with crispy crackers.
This salsa does need one hour to rest before serving so plan ahead.
1. Combine scallions, cilantro, mint, jalapeños and orange zest in a food processor and pulse until finely chopped. Transfer to a bowl and mix with cranberries. 2. Blend honey with orange and lime juices. Pour over salsa, add Tabasco sauce and chill for at least 1 hour.
This fresh cranberry salsa will stay fresh in the refrigerator for at least 3 to 4 days. Make sure to keep it in a tightly covered container to maintain its freshness.
You can make fresh salsas at the beginning of the week (better yet Sunday if you can make time) then serve them for several days during the week. These salsas give you bursts of fresh fruit, vegetables and spices and help to enhance some otherwise bland foods like plain roasted meats, fish or poultry.
