Don't wait for St. Patrick's day to enjoy this traditional Irish side dish. This colcannon dish combines, mashed potatoes, kale, onion and bacon. Serve along side your favorite Sunday roast.

russet potatoes, peeled and boiled

green (spring) onions, chopped
1/2
cup
milk or cream
8
ounces
kale, chopped and steamed

tablespoons
butter (divided)

tablespoon
parsley, chopped

bacon, fried crisp
Instructions
Mash the potatoes until smooth.
Fry the bacon until crisp then drain on paper towels. Once the bacon is cool break it up into 3/4" size pieces.
Combine the green onions with the milk or cream then add the salt and pepper. Bring the mixture to a boil then add the chopped kale and half of the butter.
Add the milk mixture to the pan with the potatoes and beat them until smooth.
Garnish the potatoes with the bacon, parsley and the rest of the butter. Serve hot.
