These buttery Coconut Date Cookies are made with shredded coconut, butter, dates and walnuts. The dough is chilled then sliced and baked for about 12 minutes. What's even better is they are less than 60 calories each!

Preheat the oven to 350F In an electric mixer bowl, beat butter with egg and vanilla until smooth. In a separate bowl, combine flour and baking powder. Gradually add flour mixture to creamed mixture; beat until blended. Mix in dates, coconut and walnuts. Form dough into two 1-1/2 inch rolls and wrap in waxed paper or foil; chill in freezer until firm enough to slice easily (about 2 hours) or up to one month. With a sharp knife, cut rolls into 3/8-inch thick slices. Place slices on a lightly greased cookies sheet and bake in preheated oven about 12 minutes or until golden. Cool on rack.
