Use two teaspoons of butter to grease the bottom of an 8x8x8" glass dish.
Combine the butter and cream cheese in a small bowl and stir until well-combined and smooth.
Add the cocoa powder to the bowl then the sweetener and vanilla. Mix well to combine. The mixture will look a bit like chocolate mousse. **Important - unless your cocoa powder is very fine, put it through a sieve first otherwise it is difficult to incorporate.
Gently fold in the walnut pieces. Scrape the mixture into a prepared glass dish. I only filled the dish about 3/4 of the bottom of the dish. This gave me pieces a little less than 1/2" thick.
Chill until set, at least one hour. I put mine in the freezer for 5 minutes, then refrigerated it about an hour before I sampled it. When you're ready to serve the fudge cut it into 12 pieces. Remember this is not your mama's fudge. This version will melt very quickly so keep the unused portion in the refrigerator.
