This pudding has the texture and a similar flavor of tapioca pudding.
Soak the chia seeds in almond milk. Mix well and allow to rest 15 minutes. Stir the mixture with a fork to break up any lumps and let sit for another 10 minutes.
Add agave and vanilla and stir in until well blended. The mixture will firm up overnight in the refrigerator.
Note: Stir in fresh berries before serving as a flavorful option.
