A highly nutritious bar combines toasted chia seed, pumpkin seeds, sunflower seeds, honey and oats.
Butter an 8" square glass pan, set aside.Preheat oven to 325 F. Combine the oats and seeds and spread onto a baking sheet. Bake for 20 minutes, stirring occasionally to make sure the mixture is evenly browned. Transfer to a medium bowl.
Pour the honey into a small saucepan and bring to a boil. Reduce heat to low and simmer for 7 minutes or until honey reaches 275 F on a candy thermometer. When it starts to thicken it is ready. Stir in butter. Pour hot syrup over oat mixture and stir to combine.
Spread the mixture in the prepared pan. Cut into bars. Tightly wrap in plastic wrap or waxed paper.
