This recipe's success depends on the use of a good quality Fontina cheese. The recipe also uses egg yolks, milk, Fontina cheese and fresh white truffles.

white truffle, sliced thin (use a truffle shaver)
Instructions
Place the cheese in a bowl, cover with milk and let it soak for several hours. ** Prep time does not include soaking time.
Prepare Fondue
You can prepare your fondue in a double boiler on a cook top or use your fondue pot.
Place half the butter in the double boiler (or fondue pot) together with the egg yolks, cheese and milk. Melt over low hear, mixing continuously with a whisk. The cheese with turn into a thick cream; add a little white pepper at this point.
Cut the remaining butter into small pieces and add them to the cheeses mixture. Stir for a few moments and sere at once, sprinkle with the slices of truffle.
Serve on classic small white "eared" plates and have your guess eat this with a fork.
