Dirty rice is a Cajun
specialty. The typical combination includes ground chicken or turkey livers and gizzards with onions, broth, green pepper and garlic. The dish gets its name because the cooked gizzards give the rice a "dirty" appearance.

cayenne pepper

teaspoon
salt

bay leaves

teaspoon
thyme

cups
water

scallions, snipped

cup
flat leaf parsley, chopped
Instructions
Combine livers and gizzards in a medium saucepan with enough water to cover and simmer until cooked through. About 15 - 20 minutes. Drain and set aside.
Saute ground beef in oil, breaking into small pieces, until brown.
Add onion, bell pepper and celery to beef. Cook until onion is transparent but not brown.
Put chopped livers and gizzards through blender. Add to meat mixture with the seasonings and 2 cups water.
Simmer for 30 minutes, remove the bay leaves and set mixture aside.
Boil rice as usual, and when done, mix with other mixture. Add chopped green onion and parsley.
Reheat all till nice and hot, remove from heat and let stand 10 minutes before serving.
