Coconut Pandan Cooler
(Buko Pandan Cooler) is a cool refreshing drink with buko (coconut) and pandan flavored gelatin and pinipig topping. If you are not familiar with these ingredients just click the links for complete descriptions and ingredient substitutions. This drink contains no alcohol.

fresh pinipig toasted
Instructions
Cook unflavored gelatin as directed in the pack. Add the pandan leaves. Cool and pour into a dish with 2" sides. An 8x8x8 glass cake pan should work. Refrigerate until the mixture has chilled and gelled.
When gelatin has cooled down, cut into cubes.
Mix the coconut (buko) water and the sweetened condensed milk and mix well. Add the grated coconut and gelatin.
Serve best with ice cubes and toasted pinipig.
