can be use as a topping for salads, vegetables, pasta or warmed or poached fruit. There are hundreds of recipe variations but here are a few basic versions. Vary the type of blue cheese you use to your taste. You can try Gorgonzola, Stilton or even a Danish Blue.

Basic Blue Cheese Sauce

Instructions
Kicked Up Blue Cheese Sauce
Recipe from Food TV network. This sauce is simple and versatile. Serve as a dip for chicken wings or as a spicy salad dressing.
8 ounces ranch style dressing
1/4 cup crumbled blue cheese
1/4 teaspoon cayenne pepper
In a small bowl mix together all ingredients.
Gorgonzola sauce
From Bon Appetite,2001. Use over pork or chicken.
1 tablespoon butter
1 tablespoon all purpose flour
1 cup whipping cream
1/4 cup dry white wine
1/4 cup canned low-salt chicken broth
1 cup crumbled Gorgonzola cheese (about 4 ounces)
Melt 1 tablespoon butter in heavy small saucepan over medium heat. Add 1 tablespoon flour and whisk 1 minute. Gradually whisk in whipping cream, white wine and chicken broth. Boil until mixture is thick enough to coat spoon, whisking frequently, about 1 minute. Add crumbled Gorgonzola and whisk until cheese is melted and smooth and sauce is reduced to desired consistency, about 5 minutes.
Additional Notes
This sauce goes well well served over steak or chicken.
Crumble the cheeses, and combine in a small pan with the créme fraîche. Heat gently, stirring with a wooden spoon, until melted. Remove from the heat. Add a little more créme fraîche if sauce is too thick to pour.
