Preheat oven to 350 degrees F (175 degrees C).
Use oil spray and prepare a silicone 6-cup muffin form or grease 6 muffin cups or line with paper liners.
Fry the bacon until crisp or however you like to eat bacon, set aside and crumble or break into pieces once cooled.
Beat the eggs together in a large bowl. Add the chopped scallions, scallions (green onions), kosher salt, and black pepper. Also, add in the red bell pepper if using.
Evenly distribute all (reserving 1 tablespoon crumbles) of the crumbled bacon in the bottom of the muffin wells.
Pour egg mixture evening into your muffin form or cups.
Top the each muffin with a few shreds of cheese and the reserved bacon.
Bake the muffins in the preheated oven until set in the middle about 18 to 20 minutes.
You can increase the recipe and just allow 1 egg per muffin and increase the other ingredients by about 1 tablespoon per muffin.
Keep this Paleo friendly by skipping the cheese. Depending on how strict you are you can use turkey bacon OR ham instead of regular bacon.
If you want this to remain a "free" meal just exchange the bacon for some lean ham and leave off the cheese. I would definitely use the bell pepper to add some flavor depth or they may seem a little bland.
