What are Yams?
Yams
are indigenous to South and Central America as well as parts of Asia and Africa. In the U.S. sweet potatoes are referred to as yams even though they are an entirely different species. True yams are very uncommon in the U.S. and if they are available they are most likely found in Hispanic and Asian markets.
Like the sweet potato true yams can be boiled, roasted or baked. Some yams can be quite dry in texture and are best boiled. See yam substitutes below. Use this link if you are looking for a

Substitute for Yams
If you don't have yams you can easily substitute a starchy potato such as a russet
OR> Green plantains
OR> Sweet potato. The yellow sweet potato is dryer than the red.
