Vasterbotten cheese (Västerbotten) is a Swedish cow's milk cheese with a semi-sharp flavor. In Sweden the cheese is served at late summer crayfish parties. It is also used in a well-known Vasterbotten cheese pie. If you can find it, use it on your cheeseboard with pickled herring and dark brown bread. Serve with a Cabernet Sauvignon.
You most likely won't find this in your local grocery store (unless you are in area with a Swedish population.
