What is Valdeon?
Valdeon
cheese is a Spanish blue cheese, made in Posada de Valdeon, in the Castile-Leon region of the northwestern Spain. It is a rich, creamy, intensely-flavored cow and goat's milk blue cheese, saltier than Stilton yet not as yellowed or as biting as its cousin Cabrales and many times this name is used interchangeably. It is wrapped in sycamore maple or chestnut leaves before being sent to market, which contribute to their distinctive appearance and complex flavor. Serve with a Rioja wine.
