What is Upside-Down Cake?
A cake which is made by placing butter and sugar on the bottom of a cake pan, topping the ingredients with fruit (pineapple and cherries being the most traditional version) then batter. Once baked the butter and juices from the fruit create a caramelized affect. To serve; the cake is inverted onto a plate, fruit side up.
History
The recipe was first seen in the 1930's and appeared in the Sears Roebuck catalog in 1936 but it is conjectured the cake dates back to the 1920's. Upside-down cakes can be made with other fruit as well such as pears or plums.
