What is Ulluco?
A tuber (Ullucus tuberosus) grown in the South American Andes. Similar to a potato but with a higher water content the tuber can be eaten raw or boiled and retains a crisp texture even after cooking. The Ulluco does not work well baked or fried. The tubers are seen in several colors including pink, purple, yellow and green. The leaves of the plant are edible as well.
