Turbinado Sugar

Turbinado Sugar is type of "raw sugar" made using cane sugar from the initial pressing of the cane, allowing the natural molasses to remain in the crystals. The resulting crystals are steam-cleaned to remove any contaminants but retain their slightly light brown color.

Substitute For Turbinado Sugar

If you don't have turbinado sugar you can replace it with:

• Equal amounts of Demerara sugar which will provide more of a molasses flavor.
• OR - Use light or dark brown sugar which will be moist rather than dry
• OR - Alternately use white granulated sugar, smaller crystals, no molasses flavor.
• OR - You could use some sanding sugar if you happen to have it on hand. If the sugar has been colored you might want to consider if that will affect your end product.
