A truffle shaver is a tool made out of metal which is used to shave very thin pieces of fresh truffle for use in numerous dishes including pastas, soups, risotto, sauces and even salads. The truffle shaver is typically adjustable so you can achieve your desired truffle thickness. The truffle shaver shown is made of stainless steel and was manufactured in Italy. If you use fresh truffles then you know how precious and expensive they are. It is important to use a good quality truffle shaver so no truffle is wasted.
In addition to slicing truffles these make an excellent shaver for chocolate to make chocolate curls.
To use the shaver you hold the slicer parallel to the food or bowl you are slicing into then slide the truffle over the (very sharp) blade and allow the slices to fall into the food. This is a very sharp tool and inappropriate for use by small children.
Truffle shavers are typically available at good kitchen and specialty shops such as Sur la Table, Williams Sonoma or Dean and Deluca. The best shavers are still made in Italy. They can also be purchased online at Amazon.com: Truffle Shaver.
