What is Tobiko?
Tobiko
is the roe (eggs) of the flying fish. The roe is used as you would any caviar. It is popular as a sushi making ingredient and provides a firm crunchy texture. Tobiko is normally bright orange but sometimes the roe is colored with wasabi (front center sushi) to produce a green roe or flavored with soy sauce for a dark brown/black roe.
Substitute for Tobiko
You can substitute other types of roe for tobiko but it may not provide the same texture. You can also used small chopped black olives. These look great on deviled eggs and add a little salty flavor but probably not a good substitute on sushi.
