Timson cheese is a washed rind cheese made from the unpasteurized cow's milk. Aged 5-6 months, Timson has a rich woodsy, almost smoky flavor. The texture is smooth and buttery, and is extra creamy near the edges. The exterior is orangish-yellow, the interior light yellow.
Timson was produced by the Vermont Shepherd Cheese company starting in about 2002. Sadly, the product was short-lived and stopped being made as of 2004. Although they no longer produce Timson, they still produce their award-winning Vermont Sheppard cheese.
